Episode Description

Nikki Seaman built Freestyle Snacks in one of the most overlooked grocery categories, shelf-stable olives, and took it from a pandemic-era idea to more than 5,000 retail locations including Whole Foods and Target. In this episode of Know Thy Shelf, she gets candid about what CPG data actually looks like for a growing startup, how she thinks about velocity without access to expensive syndicated data, and what it takes to earn and hold shelf space at major national retailers. Nikki is direct about the real costs of retail growth, working with distributors and brokers, and what she'd tell founders before their first major push.

Key Insights & Quotes
“There’s no easy button. You have to be willing to do the hard work.”
“As a new brand, you obviously don't really have data or velocity, so I think at this stage, storytelling is key.”
About the Guest
Nikki Seaman
CEO & Founder, Freestyle Snacks

Nikki Seaman is the founder and CEO of Freestyle Snacks, a woman-founded brand reimagining olives and pickles as liquid-free, flavor-packed snack pouches. The idea came during the pandemic, when grocery store olive bars shut down and Nikki was left with what she calls the "eyeballs in a jar" of the traditional olive aisle. After sampling more than 50 olive varieties across six countries, she launched Freestyle direct-to-consumer in January 2022, entered Whole Foods in 2023, and has since grown the brand to more than 5,000 retail locations including Target, CVS, Walmart, and Erewhon, plus placement on Delta Air Lines flights.

In 2025 she landed a $300,000 deal with Poppi founder Allison Ellsworth on Shark Tank. A University of Pennsylvania graduate, Nikki started her career in management consulting at Bain & Company and spent time at PepsiCo and Whisps before going out on her own. Based in Atlanta, she built Freestyle largely as a solo founder, and is candid that getting to national distribution meant making just about every mistake a CPG founder can make.
